My win of the week (something I’ve just managed to do again for the first time since having my baby) was inspired this week by The Great British Bake Off: baking a banana cake!
Pre-baby, I loved getting my bake on. Obviously, I hope when baby is older we’ll be getting our bake on together, but for now it felt amazing to find enough pockets of time in one day to accomplish a complete, fully baked cake. Not to mention getting to watch the GBBO final with baby in one hand and homemade cake in the other – doesn’t get better than that!
If you fancy a go at my easy, throw it together in a bowl, banana cake here’s how. (Note: This cake is definitely not my own original recipe/method, rather passed on to me by a family member… however its actually origin is a mystery to me!)
3 ripe banana
1 cup of sugar
1.5 cups of self raising flour
2 tbsp milk
- Mix together the sugar and butter in a bowl
- Mix the other ingredients in another bowl
- Combine the 2 mixes
4. Put combined mix into a lined baking tin (I use a silicone loaf style tin)
5. Cover with foil at 150 for 40 mins, then remove the foil for a further 25-30 mins.
